Pesto Chicken Salad Sandwiches

Us Tipsy gals used to have a favorite lunch spot called the Memorial Grill here in Houston. They served the BEST, salads, sandwiches, and soups that I have ever had, but one day, much to all or our dismay, they up and closed on us!!!! Honestly, we’re still not over it, but I THINK I have mastered one of my favorite menu items of theirs…try it, you won’t be disappointed!

Ingredients:

  • 2 pds. cooked boneless, skinless, chicken breasts or strips
  • 6 oz. plain, non-fat, yogurt
  • 1 package of prepared pesto
  • 1 large tablespoon of mayo or miracle whip
  • 1 small lemon, optional

Directions:

  1. Mix all ingredients together.
  2. Add juice from 1 small lemon, optional.
  3. Serve on your favorite bread. (Mine is whole grain.)

    Just wondering if you shred or cube the chicken and mix it in, or mix the wet ingredients and spread them on a cooked chicken breast? Either way, it sounds good!

  2. I cube the chicken after I boil it with just salt and pepper, but I think shredded or grilled chicken sounds GREAT!

    this was dinner for us the day you posted it. :o) i subbed plain hummus for mayo and we had it over pasta instead of on bread, but ohmygoodness was this supper good and easy! thanks sarah!
