Harvest Soup

So y’all this is the EASIEST RECIPE EVER.  I promise.  And it’s GOOD.  It just got a tad bit cold here, so I busted out the recipe and made some.  The best part of this soup, it’s probably even better the next day, after all the flavors meld.

Harvest Soup

  • 3 lb ground chuck
  • 2 onions, chopped
  • 4 ea Progresso Minestrone Soup (19 oz. cans)
  • 4 ea Rotel Tomatoes (10 oz. cans)
  • 4 ea Ranch Style Beans (15 oz. cans)

Brown the meat with the chopped onion.  Drain the fat and add in the rest of the ingredients.  Simmer for an hour.  Best if cooked, refrigerated, and re-heated.

  1. I make a similar soup (but with taco seasoning and corn instead of minestrone) and we love it. Yours looks super good and we’ll definitely be giving it a try. How big of a pot do you use for that? Would a dutch oven work? I’m not sure mine has room for that much liquid…

  2. @Haley I ended up halving the recipe and it came about halfway up my 6qt (I think it’s 6qt) stockpot. If you make the full recipe it’s A LOT and you’ll probably end up freezing some…
