Tipsy Favs: Ice Cream

I scream, you scream, we all scream for _________! It’s the PERFECT summer snack…here’s our faves, what’s yours?

  1. Sarah: Blue Bell Cookies and Cream, This has been my all time favorite since I was little. I don’t eat a ton of ice cream (and my ass thanks me for that), but if I ever have a craving, you can bet that I’m headed straight for Blue Bell Cookies and Cream!!!! (And yes, it has to be Blue Bell…)
  2. AK: Blue Bell Homemade Vanilla, When it comes to ice cream I’m very plain jane.  I’m a huge fan of Der’s pick but if I’m buying ice cream at the grocery store or somewhere not McDonald’s then I’m definitely going with Blue Bell Homemade Vanilla.  And like Sarah said, yes it has to be Blue Bell.
  3. Court: TCBY White Chocolate Mousse, TCBY’s White Chocolate Mousse.  Easy on the cals, awesome ass flavor.  I always, always add sprinkles to mine.  I don’t really keep ice cream in the house, and there is a probably a reason for that 🙂
  4. Der: McDonalds Vanilla Cone, There will never ever be an ice cream that will beat McDonald’s ice cream cones in my book. I used this as my weight loss crutch back in the day.. it’s low cal and mighty delish!

Little Snacky Snack

Healthy snacking is always a challenge for everyone and I get very sick of eating the same thing all the damned time. I’ve come across an unbeatable, low cal combo that I just have to let y’all in on.

Shower de Der: Cupcake & Cake Toppers

As Sarah said earlier, we threw Der a shower over the weekend.  Us Tipsy gals love to throw a party! The inspiration for the party was Der’s nursery colors which were evident in the invitation.  We just went ahead with that color scheme throughout including the cupcakes and cake!

We knew we were going to make cupcakes (yellow cake with cream cheese icing) for the guests but decided we wanted a little cake for the mommy and daddy to be as well.  We also know the extent of our cake decorating skills and where they end.  So we turned to Etsy, of course. We saw these adorable toppers from Two Sugar Babies and ended up with a variation on that.  Tomorrow we will show you the “cake”scape and how adorable the toppers ended up…so stayed tuned!

Tipsy Favs: Cereal

Cereal! It’s what’s for breakfast! ha! After doing our little Tipsy fav roundup, it seems us Tipsy gals are either Special K peeps or Kashi peeps.  What do you eat for breakfast?

  1. AK-Special K Protein Plus-I am definitely the kind of person that could eat the same thing everyday for breakfast.  I got a recommendation for this cereal by a nutritionist because it has a good balance of carbs and protein and I’ve been stuck on it ever since!
  2. Court-Kashi Organic Promise Strawberry Fields-This is my absolute FAV.  I love almost all Kashi brands, they really help you get your fiber on.  The only thing about this one, its kind of hard to find.  Costco is generally good to us when it comes to this brand though.
  3. Sarah-Kashi Organic Promise Autumn Wheat-I just started eating this a few months ago and man I’m hooked! Not only is it super-healthy for you, but it also has just a slight sweetness that is perfect to start your day.
  4. Der-Special K Cinnamon Pecan-Special K Cinnamon Pecan is by far the best cereal I have ever eaten in my entire life. Let me also let you know that I don’t eat cereal with milk. I don’t drink milk or even like it in my cereal. So, for me cereal is more of a snack food than a breakfast food. Anywho, this is like a drug to me and I go through at least one box per week. Good thing it’s low cal or I’d be in big trouble.

Run, Do Not Walk

These are like Heaven on Earth. If Heaven was a frozen peppermint patty with only 100 calories. Seriously, get on the bandwagon… you can thank me later.

The Skinny Cow White Mint Truffle Bars

Crockpot Chocolate Clusters

Have you ever made candy in a crockpot? I had heard rumors, hearsay, unconfirmed reports, allegations that this sort of thing was possible, but I had never tried.  So here’s the recipe that I tried:

  • 24oz Dry Roasted Peanuts, lightly salted
  • 4oz German’s sweet chocolate
  • 12oz bag of Semi Sweet Chocolate Chips
  • 2lbs White Almond Bark

In a 4qt crock pot, pour in the peanuts, then German’s sweet chocolate, then chocolate chips, then almond bark. Turn on Low for 3 hours.  Don’t touch it during that time.  When the 3 hours is up, stir it up really good.  This is the point where I looked at it and it was all still looking like it was in its block form and I was thinking SON OF A BITCH this is gonna be hard to stir! It’s not. Trust me.  Then simply spoon it into regular cupcake holders or mini depending on what size candies you want.  Let them harden and then remove them from the holders.  They’ll look sorta Reese’s Cup-ish on the bottom but they taste more like HEAVEN!

Chicken Teriyaki with Bok Choy Salad

I know Sarah just posted yesterday about a Chicken Salad she’s perfected and now today I’m posting a recipe.  We are not turning into a food blog, I promise! We Tipsy gals just like to eat OK?!

My husband is the chef in the family.  I can cook some stuff, I make a mean guacamole.  And I can definitely make margaritas.  But day to day? My husband, Jesse, cooks.  This is a recipe that we both contribute to and it’s been seriously good during the summer now that it’s eleventy billion degrees here lately.

SALAD
1 head Bok Choy, cut and chop leaves and stalk
1 bunch green onions, chop, including some of stem
1/4 c. sesame seeds
1/2 c. sliced almonds
1 tbsp. sugar
1 pkg. Ramen noodles (discard seasonings packet), crush before opening
1/4 c. butter

DRESSING
1/4 c. sugar
1/4 c. red wine vinegar
1 tbsp. soy sauce

CHICKEN TERIYAKI
1 sm white onion (sliced)
1lb chicken cubed
1/2 cup teriyaki sauce (from the jar) (approximated amount)

Start with combining everything for the chicken in a large Ziploc bag and let marinate for 30min or up to 2 hours. In heavy skillet, brown sesame seeds, almonds, noodles and sugar in butter. Let cool. Prepare bok choy and green onions in large salad bowl. Heat a wok on high, add a tablespoon of oil to the wok, dump chicken in. Let chicken cook, turning once. Chicken will be ready when it’s dark brown and the sauce has been reduced (ignore it a little while, maybe 15min). Combine salad, noodle mixture and dressing in bowl with tongs. Add chicken on top when it’s ready.

(The salad is great even without the chicken and is a great idea for baby showers or wedding showers.)

Pesto Chicken Salad Sandwiches

Us Tipsy gals used to have a favorite lunch spot called the Memorial Grill here in Houston. They served the BEST, salads, sandwiches, and soups that I have ever had, but one day, much to all or our dismay, they up and closed on us!!!! Honestly, we’re still not over it, but I THINK I have mastered one of my favorite menu items of theirs…try it, you won’t be disappointed!

Ingredients:

  • 2 pds. cooked boneless, skinless, chicken breasts or strips
  • 6 oz. plain, non-fat, yogurt
  • 1 package of prepared pesto
  • 1 large tablespoon of mayo or miracle whip
  • 1 small lemon, optional

Directions:

  1. Mix all ingredients together.
  2. Add juice from 1 small lemon, optional.
  3. Serve on your favorite bread. (Mine is whole grain.)

Lunch Skins

My little sister alerted me to this site and this product recently, and I immediately fell in love! I’m no conservationist hippy by any means, but I do try my hardest to keep the waste to a minimum. (AKA, I try not to use paper plates, I use towels to dry my hands instead of napkins or paper towels, and I recycle…)

These Lunch Skins might be my new best friend…I mean, they’re reusable, dishwasher safe, AND come in my favorite colors!!!

3 Green Moms are the creators of this product and I found their story inspiring…check it out…you might just have an ingenious idea up your sleeve as well!

I’m In Toddler Food Hell

Ok peeps, I need some help!  I need some new ideas for lunch and snacks for my almost 2 year old.  We are all over Goldfish Pretzels, Hormel Natural Choice Deli Meat, Granny Smith Apples, Organic Strawberries & Blueberries, Watermelon, Sun Maid Mini Snack Raisins, Yoplait Whips and of course CHEERIOS.

So PLEASE somebody give me some new ideas! I just feel like we’ve got the same rotation constantly!

(P.S. We are currently on a cheese strike, but we are working on it…)
