I’m obviously craving soups/stew/chili’s these days, and H-town is now in a deep freeze…so what’s better during a freeze? A hearty chili, but with a twist!
Ingredients
- 1 pd. chicken breast, cut into 1/2 in. cubes
- 1 medium onion, chopped
- 1.5 tsp garlic powder
- 1tbs vegetable oil
- 2 cans great northern beans, drained
- 1 can chicken broth
- 2 cans chopped green chilies
- 1 tsp salt
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp pepper
- 1/4 tsp cayenne pepper
- 8 oz. sour cream
- 1/2 cup whipping cream
Directions
- In a large saucepan, saute the chicken, onion, and garlic powder in oil until chicken is no longer pink.
- Add the beans, broth, chilies, and seasonings. Bring to a boil.
- Reduce heat, simmer uncovered for 30 min.
- Remove from heat, stir in sour cream and cream. Serve immediately.
